How we judge taste
Each blend is prepared to the label instructions in hot water with nothing added, tasted on days one, seven and fourteen, and scored on whether it reads as coffee, whether there is an earthy or bitter mushroom note, and whether it holds up iced. Blends that taste good because of added cacao, MCT or collagen still score well — but a blend that tastes good with nothing added ranks above them.

Frequently asked questions
Which mushroom coffee tastes most like regular coffee?
BrewLune Dawn Patrol, in our tasting — it is instant arabica with fruiting-body extracts and nothing else, and it reads as a normal medium roast. Four Sigmatic is the closest among the widely available brands. RYZE and Everyday Dose taste great but in a creamy, latte-like way rather than a black-coffee way.
Why does mushroom coffee taste earthy or bitter?
Mostly reishi, whose triterpenes are intensely bitter, and mycelium-on-grain powders that add a cereal note. Brands manage it three ways: keep reishi low, add cacao or coconut and MCT to round it out, or use clean fruiting-body extracts at doses the coffee can carry. The last approach is rarest and tastes best.
Does BrewLune taste like mushrooms?
No. There is at most a faint earthiness under the roast, and nothing in the blend is there to cover it up — no cacao, no creamer, no sweetener. That is why it tops this list: the flavour comes from the coffee, not from masking ingredients.
